Chocolate Chip Zucchini Bread

 This year is the first year we've ever attempted a garden. I had no idea I would end up with at least 2 zucchinis a day! I've been trying to find a good zucchini bread recipe to help use up some of our harvest, this one is our favorite so far. It's from the king aurthur flour website , and I modified it just a little. In a mixing bowl combine: -2 large organic egg -1/3 cup honey -1/2 cup grapeseed oil -1/3 cup coconut palm sugar -1 teaspoon vanilla Add and mix: -2 cups whole white wheat flour -1 teaspoon sea salt -1/2 teaspoon baking soda -1/2 teaspoon baking powder -1 teaspoon cinnamon Add and mix: -2 cups shredded unpeeled zucchini -1 cup good ingredient chocolate chips Pour batter into lightly greased bread pan, bake at 350 for 55-60 min or until toothpick comes out clean. Cool on cooling rack before eating. 

Banana Oatmeal Muffins

I knew I wanted to try this recipe out when I saw it contained no flour! I used the recipe from fit and healthy with debbie  and made it vegan by making just a few changes. My whole family loved these muffins and I love that they are so healthy with lots of flax. It's also nice to take a break from flour sometimes! -2 1/2 cups old fashioned oats -1 cup unsweetened applesauce -4 tablespoons flax meal mixed with 6 tablespoons water -1/2 cup honey -2 teaspoons baking powder -1 teaspoon baking soda -1 teaspoon vanilla -2 ripe bananas -any add ins you'd love like chocolate chips, starwberry pieces, walnuts, coconut etc... Preheat oven to 400. Line a muffin pan with muffin liners, I always grease mine with a little coconut oil but i'm not sure if thats necessary. Put the oats in a food processor or high power blender and process/pulse until you have oat flour. Add remaining ingredients (except add ins) and blend/process until mixed well and smoothed. Apple Spice Muffins

This is a recipe I got my my blendtec recipe book and modified it just a little. These muffins are the perfect fall treat. My kids can't get enough of them! -1 cup rice or almond milk -1 tablespoon fresh lemon juice -2 medium apples, peeled, quartered and cored, divided -3/4 cup coconut palm sugar or sucanat for a sweeter taste -2 organic eggs -2 tablespoons coconut oil -1 teaspoon vanilla -3/4 teaspoon pumpkin pie spice -1/2 teaspoon sea salt -1 tablespoon alum. free baking powder -2 cups whole wheat flour divided  Preheat oven to 375°F.  Add milk, lemon juice, 1/2 an apple, coconut sugar, eggs, coconut oil, vanilla extract, pumpkin pie spice and salt to blendtec and secure lid.  Press “Batters”.  Add baking powder, 1 cup of flour, remaining apples and last cup of flour and secure lid.  Press “Pulse” 6-8 times or until dry ingredients are barely incorporated and apples are chopped in bits.  Allow batter to sit 5 minutes.  Pour b...

Maple Pecan Conference Bread

My husband grew up having "general conference coffee cake" every general conference . I wanted to start a similar tradition, a special treat we could make to go along with conference twice a year. When I found this recipe, I thought it would be perfect! It was a huge hit! The pecans are so good with maple! Recipe inspired by simple healthy tasty and modified to our liking. -1 recipe of your favorite whole wheat dough (I used this one in my bread machine) -1 cup chopped pecans -1/2 cup sucanat divided -1/3 cup pure maple -1/3 cup coconut oil melted -1 tablespoon cinnamon Grease a bunt pan with some coconut oil. Put the pecans evenly around the bottom of the pan. Mix 1/4 cup sucanat, maple syrup, and 2 tablespoons of the coconut oil in a medium bowl. Drizzle some of the mixture over the pecans. In another small bowl, mix the remaining sucanat with the cinnamon. In another small bowl add the remaining coconut oil. Create little balls (golf ball size) out of your dough and dip...

Veggie Spaghetti with Garlic Bread

This is one of our favorite meals. The spaghetti is super easy and fast. The bread is a little time consuming, but easy! I didn't get pictures of the process of making the french loaf but I found a great tutorial I linked to if what I wrote doesn't make sense. For the Spaghetti -one package of whole wheat spaghetti noddles cooked and drained -jar of your favorite good ingredient spaghetti sauce (it can be tricky finding one without sugar/corn syrup, costco has a good kind) -1 tablespoon olive oil -1 small zucchini chopped -1 medium onion diced -1 cup+ mushrooms sliced -any other veggies you would like, diced tomatoes, olives, artichoke heats etc.... -basil -italian seasoning Saute veggies in some olive oil at medium heat until tender, turn heat to low and add the sauce, seasonings, olives if desired, and tomatoes if desired. Sweet Potato Chili and Honey Cornbread

This was such a great meal, yum! The cornbread was my moms recipe and I just tweaked a few things. The chili was a little too spicy for my toddlers, but just perfect for us! The original recipe came from chocolate covered katie and we modified it to our liking. Sweet Potato Chili -1 large onion chopped -1 medium sweet potato peeled and chopped -1 medium zucchini chopped -1 can black beans -1 can kidney beans -1 14 oz can fire roasted diced tomatoes -1 14 oz can diced tomatoes -1 1/2 tablespoons chili powder -1 teaspoon cumin -1 cup water and a sprinkle of vegetable broth powder OR 1 cup vegetable broth Combine all ingredients to slow cooker and cook on high for 4 hours or low for 6 hours. Whole Wheat Cinnamon Rolls (bread machine)

These taste so delicious and are so much better for you than store bought or even some of those homemade recipes that has loads of refined sugar and flour. We always make these at night and let them rest in the fridge all night and bake them the next morning for breakfast. For the Dough: -2 cups almond milk (or other non-dairy milk) -4 1/2 tablespoons coconut oil -1/2 tablespoon pure vanilla -1/4 cup honey -1/2 cup rolled oats (I've used both old fashion and quick with good results) -4 – 4 1/2 cups whole wheat flour (I use fresh ground white wheat) -1 tablespoon vital wheat gluten -1 3/4 teaspoon salt -3 3/4 teaspoon yeast Filling: -3 tablespoons coconut oil melted -3/4 cup sucanat or raw sugar -1 tablespoon cinnamon Combine ingredients in the bread machine in the order listed or according to your machines instructions. Whole Wheat Rolls (Bread Machine)

You would never guess these dinner rolls are 100% whole wheat! They are so light and very yummy! -3 /4 cup warm water -1 organic egg or 2 tablespoons flax meal + 3 tablespoons water -3 tablespoons honey -3 tablespoons olive oil -1 teaspoon salt -2-3 cups whole wheat flour -1 teaspoon vital wheat gluten or lemon juice -2 1/4 teaspoons yeast Add ingredients to your bread machine in the order listed or according to your bread machine instructions. Start dough cycle on your machine and wait a few minutes for the bread to kneed a bit. After a few minutes, check the dough to see if any more flour or water is needed. If the dough isn't forming a ball add a tablespoon of flour at a time until it forms a nice ball. If the dough is too hard, add a tablespoon of water at a time until it has a slightly sticky texture. Whole Wheat Banana Bread with Millet

Recipe was inspired by 100 days of real food and we modified it to our liking. Most banana bread recipes call for sugar, it's so unnecessary when bananas are already so sweet all on their own. The millet is optional but don't be afraid to try it out. It adds a delicious crunchy texture, not to mention tons of heath benefits ! This recipe is yummy!!!! Preheat: 350 Cook time:40-50 min -2 1/4 cups whole-wheat flour (I use fresh ground hard white wheat) -3/4 teaspoons baking soda -1/4 teaspoon salt -1/4 cup millet (rinsed) -3 ripe bananas, mashed -1/4 cup unsweetened applesauce -1/4 cup honey -2 organic eggs -1/4 cup coconut oil -1 teaspoon vanilla Whisk together the flour, baking soda, salt and millet. In a separate bowl mix mashed bananas with applesauce, honey, eggs, oil, and vanilla. Fold the banana mixture into the flour mixture until blended, careful not to over mix. In a greased pan, bake loaf for 40–50 minutes or until it comes clean with a toothpick.

Whole Wheat Scones with Honey Butter

Whole wheat scones fried in coconut oil with honey butter. I got this amazing yummy recipe from simple, healthy, tasty this makes enough dough for two loafs of bread, so I made the dough and used half for a loaf of bread, and half for scones.
