Pesto Pizza

When my friend Sarah told me about this amazing pesto recipe at vegangela  and how she loves to make delicious pizza with it, I couldn't wait to try it out! It was sooooooo good, I am really starting to believe that cheese is incredibly overrated. Who needs it? If you are still having a hard time giving up cheese, try this pesto pizza it will help!! The pesto is seriously to die for and the idea having it on a pizza is genius! I can't wait to try this pesto with pasta! -1 recipe of your favorite whole wheat pizza crust (I used this one ) -1 recipe of vegan pesto (recipe below) -favorite veggie pizza toppings, I used tomatoes, artichokes, red onion, and mushrooms (spinach and peppers would also be good.) For the Pesto: -2 cups fresh basil leaves -1 clove garlic, minced -1/3 cup extra virgin olive oil -salt and pepper to taste -1/2 cup pine nuts, lightly toasted -2 teaspoons fresh lemon juice Blend all ingredients in a blender until smooth. Hummus Pizza

This pizza was an experiment and it is the best vegan pizza I have made yet. All of my kids even asked for seconds. It was also really easy to throw together. Basically you make your favorite crust (I will include my crust recipe below) I put about 3 large spoonfuls of hummus (I bought mine at Costco, but you can easily make your own) on the crust and spread it around. Then I grated a few carrots on top on the hummus and topped it with tomatoes. Then I baked it for about 5 minutes, and topped it with baby spinach. You could easily use different combinations of vegetables. I would suggest using tomatoes because it needs the moisture. I have been making this pizza crust for a long time. It is so easy and fast and it turns out for me every time. Savory Garlic Sauce Pizza

You will be amazed at how yummy this cheese-less pizza is! When we first cut out dairy I thought cheese would be the hardest to give up but I am finding with delicious recipes such as this one, it's really not missed at all! My toddlers even loved it, they each ate 3 slices! Recipe was found here and we modified it by using our favorite whole wheat pizza dough recipe found here. -Pizza Dough (I make two medium pizzas and 1 medium loaf of bread with the best yet whole wheat bread recipe found here ) -10-12 garlic cloves -1/2 cup unsweetened coconut milk -1/4 teaspoon sea salt -1 small jar sun dried tomatoes drained and soaked in water for 1 hour -Italian seasoning, basil, any other seasonings you'd like Roast garlic cloves in the oven at 375 for 30 min or until brown. When cool enough to touch, blend cloves with coconut milk and sea salt. Simple Veggie Pizza

My friend Natalie shared the best idea for a healthy pizza that is so simple, yet I never would have thought of it. A pizza loaded with veggies, without cheese! We tried it and it was so delicious!! -Pizza dough (I make two medium pizzas and 1 medium loaf of bread with the best yet whole wheat bread recipe found here ) -Favorite good ingredient marinara sauce -Favorite veggie pizza toppings. We used spinach, tomatoes, olives and mushrooms but there are several options! Spread marinara sauce on prepared pizza dough, top with veggies and bake on a pizza pan at 475 for 10 min or until crust is brown.
