The Raw Brownie

You have to try this recipe, these are the best brownies I have EVER had in my life! And also by far the healthiest, and easiest to make! I got the recipe from my new roots , be sure to check out her post too because she goes over each ingredient and it's health benefits. I always half the recipe just because the ingredients can be pretty expensive! After trying these, you will never crave a sugary, cheap chocolate brownie again!!! It's pretty much a miracle! -2 cups whole walnuts or pecans (costco) -2 1/2 cups medjool dates, pitted (they have these at costco) -1 cup raw cacao (I get this at whole foods or vitacost ) -1 cup raw unsalted almonds, roughly chopped (optional) -1/4 teaspoon sea salt (optional) In a food processor or blender (I used my blendtec) blend the walnuts/pecans until finely ground. Marinated Murshrooms

Yum, marinated mushrooms will now be a new weekly side dish at our house. This was so yummy and I love that the mushrooms are uncooked. Recipe came from rawkinraw and we modified to our liking. -1 lb organic mushrooms, cleaned and trimmed -organic extra virgin olive oil, to coat all -sprinkling of dried basil (I go heavy on the basil, see pic above) -drizzle of Bragg Apple Cider Vinegar -juice of 1/2 lemon -a few shakes of dried onion flakes -1 tablespoon coconut aminos or good ingredient soy sauce like "shoyu" -2 cloves garlic, finely minced -1 teaspoon sea salt Add everything in a ziplock bag and shake it up so the mushrooms get well coated with everything. Put in the fridge for at least an hour to marinate, bring to room temp. before serving!

Raw Fruit Pizza

I really loved this recipe. It made more than we could eat at one time, but it saved well in the fridge and we kept snacking on it through the next couple of days. I got this recipe from here and I tweaked it a little bit for us. But, it's definitely a keeper! Raw Fruit Pizza Crust: 2 1/2 cups pecans 2 1/2 cups dates 1 tsp. cinnamon Blend together in a food processor or blender, then press onto your pan. I used a cookie sheet. Creamy topping: 3 cups raw cashews 4 lemons juiced 1/2 teaspoon sea salt 4 Tablespoons coconut oil 1/2 cup agave nectar Blend together until smooth. I loved the lemony flavor of this, and my kids ate it just fine, but they would have preferred if it had less lemon flavor. So, depending on how you like things you could easily use a few lemons and then add a little milk to get the consistency you want. Spread out onto your crust. Top with whatever fruit you please. Kale Chips

Oh my goodness, these are so good! The first time I tried making kale chips was in my oven and I just used salt, pepper, and olive oil for seasoning. They were really not good at all. I sort of gave up on the idea until I went to visit my friend Emily, who has been eating a whole foods diet for a long time, she is an expert! Her sister actually does the simple healthy tasty blog and Emily posts on there sometimes too! Anyways during our visit, she offered me some kale chips and wow, I went home and ordered a food dehydrator as soon as I could so I could make them! I got this one made by Nesco and love it so far! Raw Brownie Bites with Vanilla Frosting

I was pleasantly surprised when we tried these! Yum, they were so good and very filling! My parents, who are not whole foodies (yet) approved of them as well. I don't have a food processor so I just used my blender and it worked great! Original recipe can be found here. Brownie Bites -1 1/2 cups pecans -1 tablespoon almond butter -2 tablespoons agave -2 tablespoons cacao powder -pinch of sea salt For the frosting -1 cup raw cashews -1 teaspoons vanilla -2 tablespoons agave -1/2 cup water Start with the frosting as it needs a few minutes in the fridge to set. Add cashews into the food processor/blender and process into a fine flour. Add in the vanilla, agave and half of the water. Because this frosting is going to be thick, it can be hard to get it all mixed up by the blades. Add in more and more water (no more than the 1/4 cup) to thin it out and pause every few seconds to mix things up by hand. Be careful of the temperature of the frosting, it will heat up fast. Raw Cacao Bites

If you need a chocolate fix, these are the perfect healthy solution! Cacao powder (raw chocolate) is not only a more delicious version of cocoa powder, it's a super food! You can read more about the health benefits of cacao here. Don't expect these to be really sweet, they are more chocolatey than sweet but you can always add more honey or some pure maple if you want. I find they fulfill my need for chocolate perfectly! -3/4 cup all natural peanut butter -1/4 cup raw cacao powder (whole foods) -1/4 cup fine shredded coconut, unsweetened (whole foods) -1/4 cup old fashioned oats (i like to blend the oats to make oat flour) -1/4 cup pure honey Mix all ingredients, roll into balls and chill for a few hours. Eat without any guilt! Store in fridge if there are any left!
