Chickpea Salad Sandwiches

This is one of our favorite things to eat for lunch. Lately I've been eating this without the bread, it's so delicious either way! I prefer this to chicken salad any day! Recipe modified from simple healthy tasty .  -1 can garbanzo beans/chickpeas drained and rinsed -1/4 cup soy-free veganaise or organic mayo -1-2 pickles chopped (we get our pickles from Costco with no food dyes) -1/2 teaspoon pickle juice -1/4 cup cashews -1 tablespoon mustard -1 teaspoon dried parsley -1/2 teaspoon dill -1/4 teaspoon garlic powder -1/4 teaspoon onion powder -dash of salt and pepper Add the chickpeas to a bowl and mash them a bit with a potato masher. Add the remaining ingredients and mix well. Serve by itself or like a sandwich with lettuce and tomato if desired.

Chipolte Rice Bowls

This is one of our new favorites, it's so quick, and delicious! The kids love it which means everyone's happy when this dish is served!  For the Black Beans: -2 cans black beans drained and rinsed -2 tablespoons olive oil -2 cloves garlic, diced -1/2 teaspoon chipolte chili powder -1 teaspoon salt In a large pan heat the oil then add the black beans, garlic, chipolte powder, and salt.  Saute for 5 minutes set aside. Everything Else -3-4 cups cooked brown rice -sliced avocados -your favorite salsa, we use this one -tomatoes, corn, or any other things you think would be yummy in a rice bowl.  Add the rice, beans, avocados, and salsa in a bowl and enjoy!! Seriously so easy, healthy, and yummy!

Pasta with Garlicky Bread Crumbs

It's really quick and filling and it taste like garlic bread in pasta form!  Recipe from my recipes -1 or 2 slices of your favorite whole wheat bread - 2 tablespoons olive oil, divided   -6 garlic cloves, minced -8 ounces whole  wheat spaghetti or linguine -1/4 cup chopped fresh parsley   (or a teaspoon dried) -2 teaspoons fresh lemon juice   -1/2 teaspoon salt -1/4 teaspoon freshly ground black pepper   Preheat oven to 250. Crock Pot Cashew Chicken

Yes, we eat meat sometimes, mainly chicken and salmon! It's expensive to buy organic so we don't eat it often but I thought it was about time to add another non-vegetarian recipe on here. When I was browsing pinterest I knew when I saw this recipe that it would be worth spending the money on, and it was! Black Bean Taquitos with Cilantro-Lime Ranch Dipping Sauce

This dish was beyond delicious! I was a little worried because I had to make quite a bit of changes from the original recipes but it turned out amazing! I've already made it twice in one week! Recipes inspired by Our Best Bites cookbook and modified to our liking. Black Bean Taquitos -can black beans drained and rinsed -2 tablespoons of your favorite salsa (we love herdez) -1 garlic clove, minced -1/2 teaspoon cumin -1/2 teaspoon sea salt -1/4 teaspoon pepper -2 tablespoons fresh lime juice (one lime juiced) -a few handfuls fresh spinach -3/4 cup frozen corn -1 can diced green chillies -1 package of corn tortillas (check ingredients, should only be 3 simple ingredients) -olive oil Add 3/4 cup beans in blender or food processor with the salsa, garlic, cumin, salt, pepper, and lime juice. Crock Pot Lentil "Snobby" Joes

Lentils are my new favorite discovery! These were so delicious, they taste just like sloppy joes and without ground beef or your favorite can of sloppy joe sauce! Sorry about the bad picture, I didn't bother to try and find good ingredient hamburger buns, I'm sure they exist but we were happy using our favorite honey whole wheat bread from Great Harvest. When my friend Sarah told me about this amazing pesto recipe at vegangela  and how she loves to make delicious pizza with it, I couldn't wait to try it out! It was sooooooo good, I am really starting to believe that cheese is incredibly overrated. Who needs it? If you are still having a hard time giving up cheese, try this pesto pizza it will help!! The pesto is seriously to die for and the idea having it on a pizza is genius! I can't wait to try this pesto with pasta! -1 recipe of your favorite whole wheat pizza crust (I used this one ) -1 recipe of vegan pesto (recipe below) -favorite veggie pizza toppings, I used tomatoes, artichokes, red onion, and mushrooms (spinach and peppers would also be good.) Lentil Tacos

These are soooo tasty, my 2 year old had 4 bowls of the lentils (he can't quite eat a taco yet), I can't wait to make them again! Yum!!! -1 medium finely chopped onion -1 garlic clove, minced -1 teaspoon olive oil -1 cup dried lentils, rinsed -1 tablespoon chili powder -2 teaspoons ground cumin -1 teaspoon dried oregano -2 1/2 cups vegetable broth -1 cup salsa -12 taco shells (check ingredients) -shredded lettuce -diced tomato -avocado  -any other taco toppings you want In a large nonstick skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin and oregano, cook and stir for 1 minute. Add broth, bring to a boil. Reduce heat, cover and simmer for 25-30 minutes or until the lentils are tender. Southwest Stuffed Bell Peppers

I've tried a few stuffed pepper recipes, but I hadn't found one I liked enough to post on here until now. This one was awesome! My husband has declared it his new favorite dinner. Unfortunately, he likes it really spicy and it's much too spicy for my toddlers to eat which means I have to whip up something else for them. This recipe makes enough to fill 4 peppers but since it's just my husband and I eating them I usually stuff only 3 peppers and put the remaining mixture in the casserole dish with the peppers. Tortilla soup

I am going to try to focus my next several posts on kid friendly meals. Most everything I post does have my family's approval, but I can tell which ones my kids especially like. I kind of made up this recipe over a few months time and it has become one of the fastest meals to put together after a long day. Tortilla Soup 3 cups vegetable broth 2 celery ribs 2 carrots 2 tomatoes 1/2 tsp cumin 1/4 tsp pepper 1/4 tsp. paprika or cayenne *optional: 1/4 onion or 2 green onions (the raw onion flavor wasn't a big hit over here) I put all of the ingredients in my vitamix and blend it and then I blend it on high for about 5 minutes to heat it up. You could easily blend this up and then heat it on low over the stove until it's warm enough to your liking. Then I put it all in a pot and add: 1 can corn 1 can black beans It will be a soupy mixture like this: Then I top it with crushed chips and olives. Spicy Thai Noodles

This is what my son wanted for his birthday dinner, both of my kids love this meal! It's really good and easy! I make it while my kids are napping and let it chill in the fridge until dinner time. Recipe inspired by a small snipped and modified to our liking. -1 box whole wheat (or brown rice) linguine or angel hair pasta, cooked and drained -1-2 tablespoons crushed red pepper (I just use 1/2 tablespoon for my kids sake) -3/4 cup sesame seed oil (trader joes has the best price) -6 tablespoons pure honey -6 tablespoons coconut aminos (or good ingredient soy sauce) Toppings: -diced peanuts -shredded carrots -green onions -toasted sesame seeds In a small sauce pan add crushed pepper and sesame oil, heat on medium just until heated thoroughly, a few min. Hummus Pizza

This pizza was an experiment and it is the best vegan pizza I have made yet. All of my kids even asked for seconds. It was also really easy to throw together. Basically you make your favorite crust (I will include my crust recipe below) I put about 3 large spoonfuls of hummus (I bought mine at Costco, but you can easily make your own) on the crust and spread it around. Then I grated a few carrots on top on the hummus and topped it with tomatoes. Then I baked it for about 5 minutes, and topped it with baby spinach. You could easily use different combinations of vegetables. I would suggest using tomatoes because it needs the moisture. I have been making this pizza crust for a long time. It is so easy and fast and it turns out for me every time. Butternut Squash Mac 'n Cheeze

This is another one of those meals that makes me wonder why I thought it would be so hard to give up cheese! This recipe is so yummy and my kids (who used to eat a lot of the kraft stuff) really like it! Thank goodness because it's SO much better for their growing bodies! This yummy recipe totally surprised me, potato tacos? But, it was really good, definitely blog worthy! I hope you try it! Recipe inspired by the cooking chicks Potato Mixture: -5 medium red potatoes (or russet potatoes) washed and cubed -1 red bell pepper chopped -1 medium onion chopped -2 tablespoons olive oil -1 teaspoon cumin -1/2 teaspoon chili powder -1 teaspoon basil -1 teaspoon sea salt (or to taste) Add all ingredients to a 9x13 casserole dish and mix until well blended. "Cheese" Sauce

This is such a great recipe! My daughter was helping me make some for enchiladas and kept sneaking bites and saying "yum, cheese!" I decided to make another batch the next day when she started asking for "cheese" again. I made her a grilled "cheese" sandwich which she ate every bite of and asked for another! She ate it so fast, I didn't even have time to take a decent picture! We now double this recipe so we have plenty in the fridge for quick lunches! This is our most favorite "cheese" sauce recipe we've tried so far. -1/4 cup whole wheat flour -1/4 cup nutritional yeast (this is not bread yeast!! This is another recipe we used to LOVE before we started eating better. I knew there had to be way to make it a little more healthy. We tried "heathifying" it and it was a success! This soup is soooooo creamy!! Original recipe came from 365 days of slow cooking. -2 (14 oz) cans diced tomatoes, with juice -1 cup finely diced celery -1 cup finely diced carrots -1 cup finely diced onions -1 teaspoon dried oregano -1 tablespoon dried basil -4 cups water -1 teaspoon vegetable broth powder -1/2 bay leaf -1/2 cup whole wheat flour -1/2 cup coconut oil or earths balance -1 1/2 cups cashew cream (blend 1 1/2 cups raw cashews with 1 1/2 cups water until smooth) -1 teaspoon sea salt -1/4 teaspoon black pepper Add tomatoes, celery, carrots, water, vegetable broth powder, onions, oregano, basil, and bay leaf to a large slow cooker. Yummy Veggie Enchiladas

My husband loves enchiladas but I haven't made them since cutting cheese from our diet, when I came across this recipe I knew I had to try it! It was so yummy! I wouldn't be posting it if it wasn't! We had our friends over for dinner and they seemed to really like it too. I think next time I make this I will put it all together the night before and stick it in the fridge until it's time to bake it for dinner the next day. There are a few steps but all are easy and fairly quick. Veggie Spaghetti with Garlic Bread

This is one of our favorite meals. The spaghetti is super easy and fast. The bread is a little time consuming, but easy! I didn't get pictures of the process of making the french loaf but I found a great tutorial I linked to if what I wrote doesn't make sense. For the Spaghetti -one package of whole wheat spaghetti noddles cooked and drained -jar of your favorite good ingredient spaghetti sauce (it can be tricky finding one without sugar/corn syrup, costco has a good kind) -1 tablespoon olive oil -1 small zucchini chopped -1 medium onion diced -1 cup+ mushrooms sliced -any other veggies you would like, diced tomatoes, olives, artichoke heats etc.... -basil -italian seasoning Saute veggies in some olive oil at medium heat until tender, turn heat to low and add the sauce, seasonings, olives if desired, and tomatoes if desired. Sweet Potato Chili and Honey Cornbread

This was such a great meal, yum! The cornbread was my moms recipe and I just tweaked a few things. The chili was a little too spicy for my toddlers, but just perfect for us! The original recipe came from chocolate covered katie and we modified it to our liking. Sweet Potato Chili -1 large onion chopped -1 medium sweet potato peeled and chopped -1 medium zucchini chopped -1 can black beans -1 can kidney beans -1 14 oz can fire roasted diced tomatoes -1 14 oz can diced tomatoes -1 1/2 tablespoons chili powder -1 teaspoon cumin -1 cup water and a sprinkle of vegetable broth powder OR 1 cup vegetable broth Combine all ingredients to slow cooker and cook on high for 4 hours or low for 6 hours. Creamy Broccoli Potato Soup

This soup is total comfort food. Be sure to get RAW cashews or you will end up with a cashew flavored soup. Original recipe came from here and we slightly modified it to our liking. -1 cup raw cashews -7 cups water -1 1/2 tablespoons vegetable broth powder (or omit water and powder and use 7 cups vegetable broth) -2 potatoes, cubed -1 medium onion, finely chopped -3 cloves garlic, minced -4 cups fresh chopped broccoli -1 teaspoon basil -1 teaspoon sea salt -pepper to taste Mix vegetable broth powder and water together. Place the cashews and 2 cups of the vegetable broth in the blender. Blend until smooth. Put the remaining cups of vegetable broth in a pot. Add potatoes, garlic and onions, bring to a boil and simmer for about 10 min or until potatoes are tender. Stir in the broccoli and basil and cook for another 10-15 minutes.
