Chickpea Salad Sandwiches

This is one of our favorite things to eat for lunch. Lately I've been eating this without the bread, it's so delicious either way! I prefer this to chicken salad any day! Recipe modified from simple healthy tasty .  -1 can garbanzo beans/chickpeas drained and rinsed -1/4 cup soy-free veganaise or organic mayo -1-2 pickles chopped (we get our pickles from Costco with no food dyes) -1/2 teaspoon pickle juice -1/4 cup cashews -1 tablespoon mustard -1 teaspoon dried parsley -1/2 teaspoon dill -1/4 teaspoon garlic powder -1/4 teaspoon onion powder -dash of salt and pepper Add the chickpeas to a bowl and mash them a bit with a potato masher. Add the remaining ingredients and mix well. Serve by itself or like a sandwich with lettuce and tomato if desired.

Chipolte Rice Bowls

This is one of our new favorites, it's so quick, and delicious! The kids love it which means everyone's happy when this dish is served!  For the Black Beans: -2 cans black beans drained and rinsed -2 tablespoons olive oil -2 cloves garlic, diced -1/2 teaspoon chipolte chili powder -1 teaspoon salt In a large pan heat the oil then add the black beans, garlic, chipolte powder, and salt.  Saute for 5 minutes set aside. Everything Else -3-4 cups cooked brown rice -sliced avocados -your favorite salsa, we use this one -tomatoes, corn, or any other things you think would be yummy in a rice bowl.  Add the rice, beans, avocados, and salsa in a bowl and enjoy!! Seriously so easy, healthy, and yummy!

Easy Strawberry Poppy-seed Dressing

I was on my usual quest for a quick dinner idea. I happened upon this recipe and it was so so good and easy. The best part was that my kids all ate their entire salads with this dressing. I made a very simple salad with baby spinach, cucumbers, and sunflower seeds. But, you could put lots more or different things in your salad. Easy Strawberry Poppy-Seed Dressing 1/2 cup extra virgin olive oil 1/3 cup balsamic vinegar 1/4 cup organic evaporated cane sugar or raw honey 1/4 teaspoon sea salt 1 clove garlic 1/8 slice red onion (I didn't have this and it turned out yummy still) 1/4 cup strawberries (I thawed out a few frozen, if you don't have fresh on hand) 1 Tablespoon poppy seeds Combine all ingredients except poppy seeds in blender and puree until smooth. Stir in poppy seeds. Last up to 48 hours in the fridge. Mine lasted a good week, so use your own judgement on that one ;)

Applebees Oriental Salad

Wow, I'm so glad I happened to stumble upon this recipe! I made it tonight and yup, it taste just like the Applebees oriental salad (which is what I used to order from there in the good old eat whatever you want days). Who knows what kind of msg/preservatives are lurking in the restaurant version, not to mention the original version has inorganic chicken, loaded with hormones and antibiotics. I thought this vegetarian version was so delicious! It would be good with some organic, free range chicken as well. Recipe came from mandys recipe box and was modified to our liking. For the dressing -1/4 cup veganaise or good ingredient mayo (trader joes has one) -3 tablespoons pure honey -1 1/2 tablespoons rice vinegar -1 teaspoon dijon mustard -1/8 teaspoon sesame oil Mix all ingredients together in a jar and shake until well blended, put in the fridge while you prepare the salad For the salad -1 head organic romaine lettuce chopped -broccoli slaw (trader joes has organic) -sliced almonds...

Raw Fruit Pizza

I really loved this recipe. It made more than we could eat at one time, but it saved well in the fridge and we kept snacking on it through the next couple of days. I got this recipe from here and I tweaked it a little bit for us. But, it's definitely a keeper! Raw Fruit Pizza Crust: 2 1/2 cups pecans 2 1/2 cups dates 1 tsp. cinnamon Blend together in a food processor or blender, then press onto your pan. I used a cookie sheet. Creamy topping: 3 cups raw cashews 4 lemons juiced 1/2 teaspoon sea salt 4 Tablespoons coconut oil 1/2 cup agave nectar Blend together until smooth. I loved the lemony flavor of this, and my kids ate it just fine, but they would have preferred if it had less lemon flavor. So, depending on how you like things you could easily use a few lemons and then add a little milk to get the consistency you want. Spread out onto your crust. Top with whatever fruit you please. "Cheese" Sauce

This is such a great recipe! My daughter was helping me make some for enchiladas and kept sneaking bites and saying "yum, cheese!" I decided to make another batch the next day when she started asking for "cheese" again. I made her a grilled "cheese" sandwich which she ate every bite of and asked for another! She ate it so fast, I didn't even have time to take a decent picture! We now double this recipe so we have plenty in the fridge for quick lunches! This is our most favorite "cheese" sauce recipe we've tried so far. -1/4 cup whole wheat flour -1/4 cup nutritional yeast (this is not bread yeast!! We order ours online but whole foods has it too) -1/2 teaspoon sea salt -1/2 teaspoon garlic powder -1 cup water -1 teaspoon mustard powder -2 tablespoons coconut oil, melted In small sauce pan add flour, nutritional yeast, salt, garlic powder, and water and mix well.
