This is a delicious recipe even my picky toddlers love. I got it from here and modified it to our liking.
Preheat: 350 Cook Time: 20-25 min.
-2 medium to large sweet potatoes
-2 tablespoons coconut oil
-2 teaspoons pure vanilla extract
-1/3 cup almond or non dairy milk
-1 organic egg or egg substitute
-1 tablespoon pure maple syrup
Peel and cube sweet potatoes and boil for about 10-15 minutes or until tender. Drain, mash potatoes, add remaining ingredients, and stir. Add mixture to a square casserole dish and bake at 350 for 20-25 minutes until bubbly.
The original recipe does have a healthy pecan topping but my kids prefer it plain. Nice and simple sweet potato casserole without loads of sugar!!
