Crock Pot Cashew Chicken

Yes, we eat meat sometimes, mainly chicken and salmon! It's expensive to buy organic so we don't eat it often but I thought it was about time to add another non-vegetarian recipe on here. When I was browsing pinterest I knew when I saw this recipe that it would be worth spending the money on, and it was! We had to make a few modifications of course but it turned out great and we will be making it again! -1 large organic preferably certified humane chicken breast, cut into pieces -1/4 cup whole wheat flour -1/2 teaspoon black pepper -1 tablespoon olive oil -1/2 cup coconut aminos or good ingredient soy sauce -4 tablespoons rice wine vinegar -4 tablespoons good ingredient ketchup (whole foods has some sweetened with agave) -2 tablespoons  coconut palm sugar or Sucanat -2 garlic clove, minced -1 teaspoon grated fresh ginger -1/2 teaspoon crushed red pepper flakes -1/2 cup cashews -Cooked brown rice for serving Combine flour and pepper in large ziplock bag. Crock Pot Lentil "Snobby" Joes

Lentils are my new favorite discovery! These were so delicious, they taste just like sloppy joes and without ground beef or your favorite can of sloppy joe sauce! Sorry about the bad picture, I didn't bother to try and find good ingredient hamburger buns, I'm sure they exist but we were happy using our favorite honey whole wheat bread from Great Harvest. Recipe from simple healthy tasty -4 cups water -2 cups lentils, rinsed -1 onion, chopped -2 garlic cloves, minced -1 green bell pepper, chopped Put all the ingredients above in your crock pot and cook on high for 3 hours or until lentils are soft. Slow Cooker Overnight Pumpkin Coffeecake Oatmeal

I finally got around to trying another overnight oatmeal from healthy slow cooking , I liked it a lot! I also love waking up in the morning to delicious oatmeal that my kids can't get enough of. That just makes life easier! -1/2 cup steel cut oats (don't use rolled oats) -2 cups unsweetened coconut milk or almond milk -1/2 cup pumpkin -1/2 teaspoon vanilla -1/2 teaspoon cinnamon If you have a 1/2-2quart crock pot, spray with some olive oil to help with clean up and add all ingredients before you go to bed and set on LOW for 7-9 hours. If you have a large crock pot see this post to see how you can make this. In the morning stir up your oatmeal and add some chopped walnuts, pure maple, and more cinnamon. So so creamy and yummy!

Tomato Basil Soup

This is another recipe we used to LOVE before we started eating better. I knew there had to be way to make it a little more healthy. We tried "heathifying" it and it was a success! This soup is soooooo creamy!! Original recipe came from 365 days of slow cooking. -2 (14 oz) cans diced tomatoes, with juice -1 cup finely diced celery -1 cup finely diced carrots -1 cup finely diced onions -1 teaspoon dried oregano -1 tablespoon dried basil -4 cups water -1 teaspoon vegetable broth powder -1/2 bay leaf -1/2 cup whole wheat flour -1/2 cup coconut oil or earths balance -1 1/2 cups cashew cream (blend 1 1/2 cups raw cashews with 1 1/2 cups water until smooth) -1 teaspoon sea salt -1/4 teaspoon black pepper Add tomatoes, celery, carrots, water, vegetable broth powder, onions, oregano, basil, and bay leaf to a large slow cooker. Sweet Potato Chili and Honey Cornbread

This was such a great meal, yum! The cornbread was my moms recipe and I just tweaked a few things. The chili was a little too spicy for my toddlers, but just perfect for us! The original recipe came from chocolate covered katie and we modified it to our liking. Sweet Potato Chili -1 large onion chopped -1 medium sweet potato peeled and chopped -1 medium zucchini chopped -1 can black beans -1 can kidney beans -1 14 oz can fire roasted diced tomatoes -1 14 oz can diced tomatoes -1 1/2 tablespoons chili powder -1 teaspoon cumin -1 cup water and a sprinkle of vegetable broth powder OR 1 cup vegetable broth Combine all ingredients to slow cooker and cook on high for 4 hours or low for 6 hours. Slow Cooker Minestrone Soup

This is a really good soup for a rainy day like we had today. There are many options as far a seasonings go so just have fun with it. I love the kale in this so don't skip that part! Recipe was inspired by skinny taste and modified to our liking. -1 small onion, chopped -1 cup carrots, chopped -1 celery stalk, chopped -2 garlic cloves, minced -2 cans diced tomatoes -1 can white beans, drained and rinsed -4 cups of organic vegetable broth or 4 cups of water and 1 tablespoon vegetable broth powder -rosemary -bay leaves -basil -parsley - sea salt and fresh pepper -1 medium zucchini, chopped -2 cups chopped fresh kale -2 cups cooked whole wheat pasta shells Put onions, celery, carrots, garlic, vegetable broth, beans, and tomatoes in the crock pot. Cook on low for 6-8 hours. For the last 30 minutes add desired seasonings, zucchini, kale, and cooked pasta. Slow Cooker Overnight Maple, Pear, Oatmeal

Coming from someone who doesn't even like oatmeal (or so I thought), this was DELICIOUS!! Recipe was inspired by healthy slow cooking we modified it just a tiny bit. she has over 40 different oatmeal recipes so be sure to check them out. -1/2 cup steel-cut oats (don't use rolled oats!) -2 cups unsweetened coconut milk -1 pear chopped -1/2 teaspoon pure vanilla -1 tablespoon pure maple syrup plus some extra for serving. If you have a 1/2-2quart slow cooker, spray with some olive oil to help with clean up and add all ingredients before you go to bed and set on LOW for 7-9 hours If you have a larger crock pot like me, take an oven safe dish (I use a pyrex casserole dish), spray with a little olive oil, add all ingredients to the dish.
