Whole Grain Waffles

I know from the picture, these might not look super good but they really are! This is my favorite waffle recipe by far. So tasty and filling. These are great topped with some pure maple syrup. -1 1/3 cup whole wheat flour -1/4 cup cornmeal -1/4 cup oat flour (just blend some oats in a blender to make this) -1 1/2 teaspoon baking powder -pinch sea salt -2 tablespoons honey -2 tablespoons olive oil -1 1/3 cup almond milk (or other nondairy milk) -2 organic eggs Combine all the dry ingredients in a medium mixing bowl and stir. Add all the wet ingredients except the egg whites. Put those in a small bowl and whisk, then fold into waffle batter. Cook waffles in a waffle iron and enjoy!

Peanut Butter Banana Oatmeal Squares

These oatmeal squares were so good, my kids kept begging me for more! They are such a great snack and make the perfect family night treat, I think they would also make a great breakfast! If you like oatmeal, you will most likely love these! Recipe inspired by gingerbread bagels and modified to our liking. -1 1/2 cups quick cooking oats -1 teaspoon baking powder -1/2 teaspoon kosher salt -1 teaspoon ground cinnamon -1/4 cup raw honey -1 teaspoon vanilla extract -1/4 cup unsweetened rice or almond milk -1 large organic egg, lightly beaten -1 large mashed banana -1/4 cup creamy natural peanut butter (no hydrogenated oils or sugar) In a medium bowl mix all the dry ingredients together. In another medium bowl combine the wet ingredients (all the remaining ingredients) mix well, then add the wet to the dry and mix until combined. Use olive oil to lightly grease a square baking pan. Add the mixture and spread out evenly. Bake at 350 for 20 min. Enjoy!!

Whole grain pumpkin pancakes

I got the base of this recipe from an email from Blendtec a while back. I changed it up quite a bit. It is the most requested breakfast in our house. We have found that although these taste really good they are thicker than regular pancakes and therefore take longer to cook through. I will usually pull out my big griddle and cook several at a time so that it doesn't take so long to make breakfast. Whole Grain Pumpkin Pancakes 1 cup rolled oats 2 1/2 cups water 2 eggs 3/4 cup pumpkin puree 1 Tablespoon olive oil 1/3 cup sweetener of your choice (I have left the sweetener out and it was just fine) 2 teaspoon baking powder (aluminum free) 1/2 teaspoon baking soda 1 1/2 teaspoon pumpkin pie spice 1/2 teaspoon sea salt 2 teaspoons vanilla 1 3/4 cup whole wheat flour Grind oats in blender. Pour into large bowl. Add water and combine. Then add remaining ingredients except flour. Stir well. Add in flour and combine. Cook pancakes on heated pan until cooked through.

Oven Roasted Garlic Brussels Sprouts

Even if you don't think you like burssels sprouts, I hope you still try this, you might just have a change of heart after the first bite. -2 lb Brussels sprouts, trimmed and halved (quartered if large) -5 cloves garlic, minced fine -1/2 cup water -2 tablespoons extra virgin olive oil -1/2 teaspoon sea salt -1/2 teaspoon black pepper Move oven rack to the upper level and preheat the oven 425 degrees. In a 9x13 inch baking dish, toss together brussels sprouts, garlic, water, oil, salt and pepper and spread out in a single layer. Bake for 40-50 minutes until caramelized to taste, tossing once about 25 minutes into cooking time. Remove from oven, stir and serve. So good!

The Raw Brownie

You have to try this recipe, these are the best brownies I have EVER had in my life! And also by far the healthiest, and easiest to make! I got the recipe from my new roots , be sure to check out her post too because she goes over each ingredient and it's health benefits. I always half the recipe just because the ingredients can be pretty expensive! After trying these, you will never crave a sugary, cheap chocolate brownie again!!! It's pretty much a miracle! -2 cups whole walnuts or pecans (costco) -2 1/2 cups medjool dates, pitted (they have these at costco) -1 cup raw cacao (I get this at whole foods or vitacost ) -1 cup raw unsalted almonds, roughly chopped (optional) -1/4 teaspoon sea salt (optional) In a food processor or blender (I used my blendtec) blend the walnuts/pecans until finely ground. Maple Pecan Conference Bread

My husband grew up having "general conference coffee cake" every general conference . I wanted to start a similar tradition, a special treat we could make to go along with conference twice a year. When I found this recipe, I thought it would be perfect! It was a huge hit! The pecans are so good with maple! Recipe inspired by simple healthy tasty and modified to our liking. -1 recipe of your favorite whole wheat dough (I used this one in my bread machine) -1 cup chopped pecans -1/2 cup sucanat divided -1/3 cup pure maple -1/3 cup coconut oil melted -1 tablespoon cinnamon Grease a bunt pan with some coconut oil. Put the pecans evenly around the bottom of the pan. Mix 1/4 cup sucanat, maple syrup, and 2 tablespoons of the coconut oil in a medium bowl. Drizzle some of the mixture over the pecans. In another small bowl, mix the remaining sucanat with the cinnamon. In another small bowl add the remaining coconut oil. Create little balls (golf ball size) out of your dough and dip

Easy Strawberry Poppy-seed Dressing

I was on my usual quest for a quick dinner idea. I happened upon this recipe and it was so so good and easy. The best part was that my kids all ate their entire salads with this dressing. I made a very simple salad with baby spinach, cucumbers, and sunflower seeds. But, you could put lots more or different things in your salad. Easy Strawberry Poppy-Seed Dressing 1/2 cup extra virgin olive oil 1/3 cup balsamic vinegar 1/4 cup organic evaporated cane sugar or raw honey 1/4 teaspoon sea salt 1 clove garlic 1/8 slice red onion (I didn't have this and it turned out yummy still) 1/4 cup strawberries (I thawed out a few frozen, if you don't have fresh on hand) 1 Tablespoon poppy seeds Combine all ingredients except poppy seeds in blender and puree until smooth. Stir in poppy seeds. Last up to 48 hours in the fridge. Mine lasted a good week, so use your own judgement on that one ;)
