Banana Oatmeal Muffins

I knew I wanted to try this recipe out when I saw it contained no flour! I used the recipe from fit and healthy with debbie  and made it vegan by making just a few changes. My whole family loved these muffins and I love that they are so healthy with lots of flax. It's also nice to take a break from flour sometimes! -2 1/2 cups old fashioned oats -1 cup unsweetened applesauce -4 tablespoons flax meal mixed with 6 tablespoons water -1/2 cup honey -2 teaspoons baking powder -1 teaspoon baking soda -1 teaspoon vanilla -2 ripe bananas -any add ins you'd love like chocolate chips, starwberry pieces, walnuts, coconut etc... Preheat oven to 400. Line a muffin pan with muffin liners, I always grease mine with a little coconut oil but i'm not sure if thats necessary. Put the oats in a food processor or high power blender and process/pulse until you have oat flour. Add remaining ingredients (except add ins) and blend/process until mixed well and smoothed. German Pancakes

This is a healthified version of an old family recipe. My kids LOVE these pancakes and ask for them often.You may need to double the recipe if you have a family larger than 4. -1-2 tablespoons coconut oil -1 cup rice or almond milk (unsweetened) -1 cup whole wheat flour -5 organic eggs -pinch of salt Preheat oven to 425, put the coconut oil in a 9x13 pan and place it in the oven as it's preheating. Add the remaining ingredients to your blender and blend (I used the "batters" button on my blendtec). When the oven has preheated take out the hot pan of melted coconut oil and pour the batter in. Carefully place it back into the oven for 15 min. Serve with pure maple or your favorite healthy pancake topping.

Fabulous French Toast

This recipe is really delicious! I hope you try it and love it as much as we do!  -2 organic eggs -1/4 cup rice/almond milk -2 tablespoons whole wheat flour -3 tablespoons agave  -1/4 teaspoon sea salt -1/4 teaspoon cinnamon -1/2 teaspoon pure vanilla -6 or so thick slices of whole wheat bread (I love this recipe ) -coconut oil for pan  Beat the eggs in a medium bowl. Add remaining ingredients except bread and mix well. Dip slices of bread in egg mixture and place on hot coconut oiled griddle. Cook both sides until golden brown and serve with pure maple syrup or your favorite healthy topping. Yum!

Apple Spice Muffins

This is a recipe I got my my blendtec recipe book and modified it just a little. These muffins are the perfect fall treat. My kids can't get enough of them! -1 cup rice or almond milk -1 tablespoon fresh lemon juice -2 medium apples, peeled, quartered and cored, divided -3/4 cup coconut palm sugar or sucanat for a sweeter taste -2 organic eggs -2 tablespoons coconut oil -1 teaspoon vanilla -3/4 teaspoon pumpkin pie spice -1/2 teaspoon sea salt -1 tablespoon alum. free baking powder -2 cups whole wheat flour divided  Preheat oven to 375°F.  Add milk, lemon juice, 1/2 an apple, coconut sugar, eggs, coconut oil, vanilla extract, pumpkin pie spice and salt to blendtec and secure lid.  Press “Batters”.  Add baking powder, 1 cup of flour, remaining apples and last cup of flour and secure lid.  Press “Pulse” 6-8 times or until dry ingredients are barely incorporated and apples are chopped in bits.  Allow batter to sit 5 minutes.  Pour b...

Whole Wheat Crepes

Since we always have breakfast for dinner on Sunday's I decided to introduce my kids to the delicious taste of crepes. Oh they were in heaven. Dinner has long since been cleaned up and my poor little 2 year old is still walking around saying "more, more crepes pleases?" This healthy version of crepes taste the same as any crepe I had before we started eating better! I love how easy it is to make a recipe healthy without noticing any change in the taste. Recipe modified from 100 days of real food. . Ideas for crepe toppings/fillings are fruit spread (pictured), pure maple, peanut butter, any kind of fruit etc.. -3 organic eggs -1 cup rice milk or other non dairy milk -1 cup whole wheat flour (I use fresh ground white wheat) -3/4 cup water -1 tablespoon coconut oil (plus more for greasing pan) -1 tablespoon honey -1 teaspoon pure vanilla -1/4 teaspoon sea salt  Put all ingredients in blender and mix well. Whole Grain Waffles

I know from the picture, these might not look super good but they really are! This is my favorite waffle recipe by far. So tasty and filling. These are great topped with some pure maple syrup. -1 1/3 cup whole wheat flour -1/4 cup cornmeal -1/4 cup oat flour (just blend some oats in a blender to make this) -1 1/2 teaspoon baking powder -pinch sea salt -2 tablespoons honey -2 tablespoons olive oil -1 1/3 cup almond milk (or other nondairy milk) -2 organic eggs Combine all the dry ingredients in a medium mixing bowl and stir. Add all the wet ingredients except the egg whites. Put those in a small bowl and whisk, then fold into waffle batter. Cook waffles in a waffle iron and enjoy!

Peanut Butter Banana Oatmeal Squares

These oatmeal squares were so good, my kids kept begging me for more! They are such a great snack and make the perfect family night treat, I think they would also make a great breakfast! If you like oatmeal, you will most likely love these! Recipe inspired by gingerbread bagels and modified to our liking. -1 1/2 cups quick cooking oats -1 teaspoon baking powder -1/2 teaspoon kosher salt -1 teaspoon ground cinnamon -1/4 cup raw honey -1 teaspoon vanilla extract -1/4 cup unsweetened rice or almond milk -1 large organic egg, lightly beaten -1 large mashed banana -1/4 cup creamy natural peanut butter (no hydrogenated oils or sugar) In a medium bowl mix all the dry ingredients together. In another medium bowl combine the wet ingredients (all the remaining ingredients) mix well, then add the wet to the dry and mix until combined. Use olive oil to lightly grease a square baking pan. Add the mixture and spread out evenly. Bake at 350 for 20 min. Enjoy!!

Whole grain pumpkin pancakes

I got the base of this recipe from an email from Blendtec a while back. I changed it up quite a bit. It is the most requested breakfast in our house. We have found that although these taste really good they are thicker than regular pancakes and therefore take longer to cook through. I will usually pull out my big griddle and cook several at a time so that it doesn't take so long to make breakfast. Whole Grain Pumpkin Pancakes 1 cup rolled oats 2 1/2 cups water 2 eggs 3/4 cup pumpkin puree 1 Tablespoon olive oil 1/3 cup sweetener of your choice (I have left the sweetener out and it was just fine) 2 teaspoon baking powder (aluminum free) 1/2 teaspoon baking soda 1 1/2 teaspoon pumpkin pie spice 1/2 teaspoon sea salt 2 teaspoons vanilla 1 3/4 cup whole wheat flour Grind oats in blender. Pour into large bowl. Add water and combine. Then add remaining ingredients except flour. Stir well. Add in flour and combine. Cook pancakes on heated pan until cooked through.

Maple Pecan Conference Bread

My husband grew up having "general conference coffee cake" every general conference . I wanted to start a similar tradition, a special treat we could make to go along with conference twice a year. When I found this recipe, I thought it would be perfect! It was a huge hit! The pecans are so good with maple! Recipe inspired by simple healthy tasty and modified to our liking. -1 recipe of your favorite whole wheat dough (I used this one in my bread machine) -1 cup chopped pecans -1/2 cup sucanat divided -1/3 cup pure maple -1/3 cup coconut oil melted -1 tablespoon cinnamon Grease a bunt pan with some coconut oil. Put the pecans evenly around the bottom of the pan. Mix 1/4 cup sucanat, maple syrup, and 2 tablespoons of the coconut oil in a medium bowl. Drizzle some of the mixture over the pecans. Slow Cooker Overnight Pumpkin Coffeecake Oatmeal

I finally got around to trying another overnight oatmeal from healthy slow cooking , I liked it a lot! I also love waking up in the morning to delicious oatmeal that my kids can't get enough of. That just makes life easier! -1/2 cup steel cut oats (don't use rolled oats) -2 cups unsweetened coconut milk or almond milk -1/2 cup pumpkin -1/2 teaspoon vanilla -1/2 teaspoon cinnamon If you have a 1/2-2quart crock pot, spray with some olive oil to help with clean up and add all ingredients before you go to bed and set on LOW for 7-9 hours. If you have a large crock pot see this post to see how you can make this. In the morning stir up your oatmeal and add some chopped walnuts, pure maple, and more cinnamon. So so creamy and yummy!

Apple Pie Millet Breakfast Bake

This recipe was really good, my husband and kids especially loved it. My husband thought it tasted so much like apple pie. The cooking time is quite long, which makes it hard to prepare for breakfast if you have hungry little ones. We had this for brunch but I am wondering if an overnight crockpot method would work. I'll update if I figure that out. Recipe was inspired by healthful pursuit and modified to our liking. -3/4 cup water -1/2 cup apple juice -2-4 medjool dates, pitted (I thought 4 was too sweet but everyone else in my family loved it) -1 teaspoon vanilla -1 teaspoon cinnamon -1 tablespoon pure maple -1 pinch ginger -1 pinch nutmeg -1/4 cup millet rinsed -1 tablespoon quinoa rinsed -1 apple diced (not peeled) Preheat oven to 350, add first 8 ingredients to a blender and blend until smooth. Raw Fruit Pizza

I really loved this recipe. It made more than we could eat at one time, but it saved well in the fridge and we kept snacking on it through the next couple of days. I got this recipe from here and I tweaked it a little bit for us. But, it's definitely a keeper! Raw Fruit Pizza Crust: 2 1/2 cups pecans 2 1/2 cups dates 1 tsp. cinnamon Blend together in a food processor or blender, then press onto your pan. I used a cookie sheet. Creamy topping: 3 cups raw cashews 4 lemons juiced 1/2 teaspoon sea salt 4 Tablespoons coconut oil 1/2 cup agave nectar Blend together until smooth. I loved the lemony flavor of this, and my kids ate it just fine, but they would have preferred if it had less lemon flavor. So, depending on how you like things you could easily use a few lemons and then add a little milk to get the consistency you want. Spread out onto your crust. Top with whatever fruit you please. Whole Wheat Blueberry Waffles

We have breakfast for dinner at our house every Sunday. It's nice, the kids love it and on a Sunday the last thing I want to worry about is a time consuming dinner. We are always trying different versions of pancakes and waffles. For this one, we looked over a few different waffle recipes and came up with this. I'm always happy when our "healthified" modifications work out. These were really good! -1 1/2 cups whole wheat flour -3/4 teaspoons cinnamon -1 1/2 teaspoons baking powder -1/2 teaspoon salt -2 tablespoons unsweetened applesauce or olive oil -1 1/2 cup unsweetened coconut milk or other non dairy milk -frozen or fresh blueberries Mix dry ingredients together in one bowl then fold in applesauce and milk, don't over mix. Heat waffle iron and add batter. Then add blueberries on top of batter before closing the iron. Top with pure maple syrup.

Banana Oatmeal Pancakes

We love this recipe and the fact that it is sweetened only by bananas is awesome! This is a family favorite!! Recipe was inspired by Colourful Palate and slightly modified to our liking. -1 1/4 cup old fashioned oats -1/2 cup organic whole wheat flour -2 tsp. baking powder -1/2 tsp. sea salt -1 3/4 cups unsweetened almond milk -2 ripe bananas (I've used not so ripe bananas with good results still) Add everything in your blender except the bananas. Be sure to put your liquids in first! Blend then add bananas and blend again until well blended. Cook pancakes on a hot griddle. Serve with pure maple or your favorite healthy topping.

Homemade Granola Cereal

This is a really flexible recipe, if you don't want to use something just add more oats or whatever you want in the same amount as what you are voiding. Recipe was inspired by 100 days of whole food and modified to our liking. -4 cups rolled oats -1 cup raw sliced almonds -1 cup raw cashew pieces (or walnuts or pecans) -1 cup unsweetened shredded coconut -1/2 cup raw sunflower seeds -2 teaspoons cinnamon -1 1/2 teaspoons ginger -1/2 teaspoon nutmeg -4 tablespoons coconut oil -1/2 cup pure honey -2 teaspoons pure vanilla extract Preheat the oven to 250 degrees. Cover a rectangular baking sheet with parchment paper. Mix the dry oats, almonds, cashews, coconut, seeds and spices together in a large mixing bowl. Heat the butter/oil and honey together in a small saucepan over low heat. Once the butter/oil melts stir in the vanilla. Pour the hot liquids over the dry ingredients and stir together with a rubber spatula until evenly coated. Spread mixture onto prepared pan in one even layer...

Whole Wheat Cinnamon Rolls (bread machine)

These taste so delicious and are so much better for you than store bought or even some of those homemade recipes that has loads of refined sugar and flour. We always make these at night and let them rest in the fridge all night and bake them the next morning for breakfast. For the Dough: -2 cups almond milk (or other non-dairy milk) -4 1/2 tablespoons coconut oil -1/2 tablespoon pure vanilla -1/4 cup honey -1/2 cup rolled oats (I've used both old fashion and quick with good results) -4 – 4 1/2 cups whole wheat flour (I use fresh ground white wheat) -1 tablespoon vital wheat gluten -1 3/4 teaspoon salt -3 3/4 teaspoon yeast Filling: -3 tablespoons coconut oil melted -3/4 cup sucanat or raw sugar -1 tablespoon cinnamon Combine ingredients in the bread machine in the order listed or according to your machines instructions. Aunt Jo's Blender Wheat Pancakes

This is a great recipe I got from my aunt Jo. The kids just love these pancakes, and so do we. They are light and fluffy, you would never guess they are whole wheat. They are also fast and easy to make! Makes 8-10 pancakes -1 cup almond milk (or other non-dairy milk) -1 cup uncooked wheat (the grain) -2 organic eggs -2 tablespoons olive oil -2 tablespoons honey -1/2 teaspoon salt -2 teaspoons baking powder Put milk and wheat in a blender. Blend on high for 4-5 min. or until batter is smooth. Add remaining ingredients and blend on low until mixed. Cook pancakes on hot griddle.

Slow Cooker Overnight Maple, Pear, Oatmeal

Coming from someone who doesn't even like oatmeal (or so I thought), this was DELICIOUS!! Recipe was inspired by healthy slow cooking we modified it just a tiny bit. she has over 40 different oatmeal recipes so be sure to check them out. -1/2 cup steel-cut oats (don't use rolled oats!) -2 cups unsweetened coconut milk -1 pear chopped -1/2 teaspoon pure vanilla -1 tablespoon pure maple syrup plus some extra for serving. If you have a 1/2-2quart slow cooker, spray with some olive oil to help with clean up and add all ingredients before you go to bed and set on LOW for 7-9 hours If you have a larger crock pot like me, take an oven safe dish (I use a pyrex casserole dish), spray with a little olive oil, add all ingredients to the dish. Whole Wheat Banana Bread with Millet

Recipe was inspired by 100 days of real food and we modified it to our liking. Most banana bread recipes call for sugar, it's so unnecessary when bananas are already so sweet all on their own. The millet is optional but don't be afraid to try it out. It adds a delicious crunchy texture, not to mention tons of heath benefits ! This recipe is yummy!!!! Preheat: 350 Cook time:40-50 min -2 1/4 cups whole-wheat flour (I use fresh ground hard white wheat) -3/4 teaspoons baking soda -1/4 teaspoon salt -1/4 cup millet (rinsed) -3 ripe bananas, mashed -1/4 cup unsweetened applesauce -1/4 cup honey -2 organic eggs -1/4 cup coconut oil -1 teaspoon vanilla Whisk together the flour, baking soda, salt and millet. In a separate bowl mix mashed bananas with applesauce, honey, eggs, oil, and vanilla. Fold the banana mixture into the flour mixture until blended, careful not to over mix. In a greased pan, bake loaf for 40–50 minutes or until it comes clean with a toothpick.

Whole wheat scones fried in coconut oil with honey butter. I got this amazing yummy recipe from simple, healthy, tasty this makes enough dough for two loafs of bread, so I made the dough and used half for a loaf of bread, and half for scones.
