I finally got around to trying another overnight oatmeal from healthy slow cooking, I liked it a lot! I also love waking up in the morning to delicious oatmeal that my kids can't get enough of. That just makes life easier!
-1/2 cup steel cut oats (don't use rolled oats)
-2 cups unsweetened coconut milk or almond milk
-1/2 cup pumpkin
-1/2 teaspoon vanilla
-1/2 teaspoon cinnamon
If you have a 1/2-2quart crock pot, spray with some olive oil to help with clean up and add all ingredients before you go to bed and set on LOW for 7-9 hours. If you have a large crock pot see this post to see how you can make this.
In the morning stir up your oatmeal and add some chopped walnuts, pure maple, and more cinnamon. So so creamy and yummy!
