Whole Wheat Scones with Honey Butter


Whole wheat scones fried in coconut oil with honey butter.

I got this amazing yummy recipe from simple, healthy, tasty this makes enough dough for two loafs of bread, so I made the dough and used half for a loaf of bread, and half for scones. With half the dough we had more then enough scones for our family of four so you may want to consider doing a loaf of bread as well, or just halving the recipe below.

-1/3 Cup honey
-1/3 Cup extra virgin olive oil
-2 1/2 Cup Warm Water
-1 1/2 Tablespoons Yeast
-1 Tablespoon Sea Salt
-6-7 Cups Fresh Ground Whole Wheat Flour (I use hard white wheat)
-1 1/2 Tablespoons Vital Wheat Gluten

If you have a mixer:

Start by adding the warm water, yeast, and 2 cups of flour to your bowl. Mix a few times around then let it sponge for 15 min.

Add the oil, honey, vital wheat gluten, salt, and 4-5 cups additional flour until the dough is all together and the sides of the bowl are clean. Don't let the dough get too dry and stiff, it's okay if it's a little sticky. Mix in mixer for about 5-8 min or until it has a good smooth, elastic texture. Now for scones, I usually leave my dough in the bowl, cover and let rise for about 30 min. You could also put the bowl in the oven with a bowl of hot water on the bottom rack, dough on the top covered. I've had very good luck rising dough this way.

Now kneed the dough a few times and roll it out into a rectangle that is 1/2" thick. Use a pizza cutter to cut the dough into desired scone shapes, we do squares. In a frying pan put about 1/2'' deep coconut oil in and heat. Gently place 2-3 squares (what ever you have room for) in pan and fry until golden brown on the bottom. Then with tongs flip the fry bread and cook until golden brown on the other side. Then remove to a plate covered with a paper towel.

To make the honey butter, mix some pure honey and coconut oil together to taste, just use the coconut oil left over from frying. Add a little Cinnamon if desired. Delicious, and kid approved!

Oh my goodness, these are so good! The first time I tried making kale chips was in my oven and I just used salt, pepper, and olive oil for seasoning. They were really not good at all.
