Raw Brownie Bites with Vanilla Frosting

I was pleasantly surprised when we tried these! Yum, they were so good and very filling! My parents, who are not whole foodies (yet) approved of them as well. I don't have a food processor so I just used my blender and it worked great! Original recipe can be found here.

Brownie Bites

-1 1/2 cups pecans
-1 tablespoon almond butter
-2 tablespoons agave
-2 tablespoons cacao powder
-pinch of sea salt

For the frosting
-1 cup raw cashews
-1 teaspoons vanilla
-2 tablespoons agave
-1/2 cup water

Start with the frosting as it needs a few minutes in the fridge to set. Add cashews into the food processor/blender and process into a fine flour. Add in the vanilla, agave and half of the water. Because this frosting is going to be thick, it can be hard to get it all mixed up by the blades. Add in more and more water (no more than the 1/4 cup) to thin it out and pause every few seconds to mix things up by hand. Be careful of the temperature of the frosting, it will heat up fast. Once you have the frosting mixed up, fill up a pastry bag, (I used a sandwich baggie and cut a hole in the corner when I was ready to frost), set it in the fridge to firm up

Now for the brownies, add the pecans into your food processor/blender and process them down to a fine flour, then until it stops moving. Give it a good stir by hand and then toss in the rest of the ingredients. Continue to process until the mixture forms a solid ball. Transfer to a bowl and mix by hand until well mixed.

Grab a small amount of the dough and roll into a ball with your hands. Press the ball down with your thumb to flatten it out and make an impression in the middle. Fill up the indentation of each brownie bite with the frosting. Store in the fridge, yields about 12 bites.

German Pancakes

This is a healthified version of an old family recipe. My kids LOVE these pancakes and ask for them often.You may need to double the recipe if you have a family larger than 4. -1-2 tablespoons coconut oil -1 cup rice or almond milk (unsweetened) -1 cup whole wheat flour -5 organic eggs -pinch of salt Preheat oven to 425, put the coconut oil in a 9x13 pan and place it in the oven as it's preheating. Add the remaining ingredients to your blender and blend (I used the "batters" button on my blendtec). When the oven has preheated take out the hot pan of melted coconut oil and pour the batter in. Carefully place it back into the oven for 15 min. Serve with pure maple or your favorite healthy pancake topping.

Our Favorite Chocolate Chip Oatmeal Cookies

  This used to be our go to recipe for cookies before changing our diets. Since it's always been a favorite, we decided it was time to make it a little healthier. I love how simple it is to heathify sweets, I really can't tell the difference between these and the old version.  -1/2 cup coconut oil -1/2 cup earths balance or organic butter -1/2 cup evaporated cane juice crystals -1/2 cup sucanat -2 organic eggs -1 teaspoon vanilla -1 1/2 cup whole wheat flour -1 teaspoon baking soda -1 teaspoon cinnamon -1/2 teaspoon sea salt -3 cups oatmeal -1 cup chocolate chips (we use the vegan kind from Costco) Preheat the oven to 350. Beat the oil/butter and sugars together until creamy, add the eggs and vanilla, beat well. In a bowl combine flour, baking soda, cinnamon, and salt, stir then add to mixture. Stir in oats and chocolate chips. Drop on ungreased cookie sheets and bake for 10-12 min.
