Veggie Spaghetti with Garlic Bread

This is one of our favorite meals. The spaghetti is super easy and fast. The bread is a little time consuming, but easy! I didn't get pictures of the process of making the french loaf but I found a great tutorial I linked to if what I wrote doesn't make sense.

For the Spaghetti
-one package of whole wheat spaghetti noddles cooked and drained
-jar of your favorite good ingredient spaghetti sauce (it can be tricky finding one without sugar/corn syrup, costco has a good kind)
-1 tablespoon olive oil
-1 small zucchini chopped
-1 medium onion diced
-1 cup+ mushrooms sliced
-any other veggies you would like, diced tomatoes, olives, artichoke heats etc....
-basil
-italian seasoning

Saute veggies in some olive oil at medium heat until tender, turn heat to low and add the sauce, seasonings, olives if desired, and tomatoes if desired. Serve on top of cooked noddles when it's heated through out.

For the Garlic Bread
Dough
-3/4 cup warm water
-1 egg
-3 tablespoons honey
-3 tablespoons olive oil
-1 teaspoon salt
-3 cups whole wheat flour
-1 tablespoon vital wheat gluten
-2 1/4 teaspoons yeast

French Bread Topping
-1 egg white
-1 tablespoon water

Garlic Spread
-2-3 teaspoons olive oil
-1/2 teaspoon sea salt
-8-10 cloves garlic
-garlic powder (optional)

Add dough ingredients to your bread machine in the order listed or according to your bread machine instructions.

Start dough cycle on your machine and wait a few minutes for the bread to kneed a bit. After a few minutes, check the dough to see if any more flour or water is needed. If the dough isn't forming a ball add a tablespoon of flour at a time until it forms a nice ball. If the dough is too hard, add a tablespoon of water at a time until it has a slightly sticky texture.


After the cycle is complete take the dough out and kneed it a few times. Use olive oil on your surface and with a rolling pin roll dough into a 12x15 rectangle. Then tightly roll the dough into a loaf (kind of like rolling cinnamon buns), pinch the ends closed and place on a baking pan seam side down. If this is too confusing, check out this tutorial. Use a knife to slice the loaf top 3 times 1/4'' deep. Add the egg white and water together and whisk, brush mixture on the top and sides of the loaf. Let the dough rise, covered in a warm place until doubled (about 3o min) Bake at 375 for 20 min. or until golden brown.

In the meantime in a small sauce pan, add all garlic cloves and add just enough water to cover them. Put on stove on low heat, when it begins to simmer, let it continue for about 3 more minutes and drain water off cloves. In a bowl add the cloves, olive oil, and sea salt and mash together until it's a paste.

When the loaf is all baked, let it cool on a wire rack. Slice it down the middle, and spread the paste onto the loaf halves. Sprinkle some garlic powder on top of that if you like it really garlicky like me! Stick it in the oven at 450 for just 5 min. Tasty!

Southwest Stuffed Bell Peppers

I've tried a few stuffed pepper recipes, but I hadn't found one I liked enough to post on here until now. This one was awesome! My husband has declared it his new favorite dinner. Kale Chips

Oh my goodness, these are so good! The first time I tried making kale chips was in my oven and I just used salt, pepper, and olive oil for seasoning. They were really not good at all. I sort of gave up on the idea until I went to visit my friend Emily, who has been eating a whole foods diet for a long time, she is an expert!
