The Raw Brownie


You have to try this recipe, these are the best brownies I have EVER had in my life! And also by far the healthiest, and easiest to make! I got the recipe from my new roots, be sure to check out her post too because she goes over each ingredient and it's health benefits. I always half the recipe just because the ingredients can be pretty expensive! After trying these, you will never crave a sugary, cheap chocolate brownie again!!! It's pretty much a miracle!

-2 cups whole walnuts or pecans (costco)
-2 1/2 cups medjool dates, pitted (they have these at costco)
-1 cup raw cacao (I get this at whole foods or vitacost )
-1 cup raw unsalted almonds, roughly chopped (optional)
-1/4 teaspoon sea salt (optional)

In a food processor or blender (I used my blendtec) blend the walnuts/pecans until finely ground. Add the dates one by one pulsing as you go. If using a blender, you may need to stop and help get things moving a bit with a spoon since there is no liquid. Add the cacao and salt (if desired, I can't tell it's missing so I never add it) and pulse some more until evenly mixed. In a bowl, add the mix and then add the almonds (sometimes I prefer mine without almonds) and stir. Press in a square pan or if you are cutting the recipe in half like me, put in a small Tupperware like dish. Cover store in refrigerator until ready to serve. These taste best when cold so try to let them chill at least 30 min before digging in!

Southwest Stuffed Bell Peppers

I've tried a few stuffed pepper recipes, but I hadn't found one I liked enough to post on here until now. This one was awesome! My husband has declared it his new favorite dinner. Unfortunately, he likes it really spicy and it's much too spicy for my toddlers to eat which means I have to whip up something else for them. Oh my goodness, these are so good! The first time I tried making kale chips was in my oven and I just used salt, pepper, and olive oil for seasoning. They were really not good at all.
